Use Royal Icing for Decorating Cookies

Royal Icing has been around for a very long time. Anyone who has decorated a cake knows about Royal Icing. Learning how to make beautiful flowers and leaves, for example, is a skill learned a long time ago. Because they are made with egg whites, it may seem difficult for a beginner. Egg whites that need to be whipped until light and fluffy can be a disaster if all the utensils are out of oil. Even using creams that contain any oil can damage the fluffy texture.

Follow the simple rules.

Following simple rules, and following the letter writing process, provides a perfect medium that can also be used to decorate cakes. Understanding the use of egg whites in this icing can help everyone. Egg whites require all ingredients without oil. There is no way around this, if the goal is to whip them up to the height of glory and form. For this reason, using a glass or metal plate is essential. Don’t try to beat the egg whites in a plastic bowl because no matter how clean they are, the plastic still contains residual oil. The addition of any ingredients that are completely free of fat will cause the egg white to deteriorate. Always use high quality ingredients and alcohol. Do not try to use orange oil as a flavoring, or the result will be a mess. Be very careful when separating the eggs, so you don’t get the yolk in the whites.

Next, select a recipe.

Once all your utensils are clean, you can decide which method to follow. An old tried and true recipe uses three egg whites. Egg whites are combined with 4 cups of sifted confectioners’ sugar, and half a teaspoon of cream of tartar, to help the egg whites retain their shape. With a mixer, beat the ingredients until combined and beat on medium speed for 7 to 10 minutes or until very stiff. Vanilla or other flavoring is not necessary, although it is fine. Remember to keep the bowl covered with a damp cloth when not in use or the icing will form a crust and be difficult to use.

There is another way to make Royal Icing, using 3 tablespoons of Wilton Meringue Powder instead of egg whites, 4 cups of sifted sugar and 5 to 6 tablespoons of warm water. This is combined in the bowl of a mixer and beaten for 7 to 10 minutes or until very stiff. If too thick, add more water. The same rule applies to keeping a screen with a damp cloth. Liquid food coloring can be added to make the icing, if needed. Remember, being watery, it thins the icing a bit, so be careful. Branding can contain glycerin, and it can interfere with the icing, so avoid it, or check the label.

If making Royal Icing but not needing it at the same time, it can be tightly covered and stored for a week. Once opened, if the consistency is spongy, you may need to beat it again to bring it back to its original shape.

How to use Royal Icing.

Now that you’ve made the icing, how can you use it? The best way to use the icing is in a piping bag, using an icing tip. If you use a reusable icing bag, make sure it has not been used on other surfaces or enough oil residue may be left behind to ruin the icing. There are many disposable bags available these days, which make this process much easier. If you are using piping bags, you can use the tips for icing, or you can just cut a small hole in the tip and fill the bag. After filling the bag, hold the lid above the icing level, and take it under the thumb and first finger. Hold the bag tightly and twist it, creating pressure on the contents. Run your fingers around the bag, and squeeze to release the icing for decoration. Release the pressure to stop the flow. I realize this may sound difficult if someone has never done it before, but once you get the hang of it, it will work fine.

There are many types of decorative tubes and products available today that can take some of the hassle out of these last tips. If you want one of the products on the market, do what works best for you.

The best way to decorate cookies is to simply outline them, or draw them. If the cookies have a shape, like a Christmas tree, or a bunny, for example, the tree can be defined by using crossed lines, based on the wreath. Bunny can have detailed ears and claws and add an eye. Use your imagination. For more information, make sure that your bag or tube has a very small hole, so that the icing comes out the best. For a simple and quick explanation, a slightly larger opening will do the trick.
