Bread was invented in the Neolithic period; and ancient records reveal many people adding other ingredients to bread to improve its taste. In ancient Greece, flat bread garnished with spices such as onions, garlic, and herbs was very popular. The uniformed Persian soldiers under Darius the Great baked flatbread on their shields, then dressed them with dates and cheese. Alexandre Dumas, an elder, writing in 1830, explained that pizza was the staple food of the poor people of Naples in winter, and that this pizza was garnished with oil, tallow, lard, cheese, tomatoes, or anchovies. In 1889, in honor of the Italian Queen Margherita of Savoy, “Pizza Margherita” was created by chef Rafaele Esposito: this pizza was decorated with mozzarella cheese, tomatoes, and basil to reflect the colors of the Italian flag.
Pizza was brought to the United States by Italian immigrants who wore chef jackets in the late 1900s. American cities with large Italian populations, such as New York, Philadelphia, Chicago, and San Francisco , featured pizza vendors in their Italian neighborhoods selling their goods from copper drums with fake stems filled with charcoal (from the pizza oven) to preserve them.
