Food from Anhui

The Anhui school of Chinese cuisine is sometimes known as “mountain cuisine,” and rightfully so. Most ingredients come fresh from the mountain to your plate.

Many of these dishes are cooked slowly, allowing the flavors of the hardy roots and other ingredients to come out. Their soup is very good. Making good sautes and stews are the hallmarks of a true Anhui chef.

Food from Guangdong

This is the most common type of Chinese food you will find outside of China. Why? Because most Chinese immigrants come from this area!

These dishes are usually sweet and have many sauces. But it’s not what you think of Western sauces: most Cantonese sauces are mild and light. Cantonese chefs are also known to take their time, and you can find quite a few dishes with “fun” aromas.

Food from Jiangsu

One of the “royal foods” favored by emperors, food from Jiangsu is still a favorite among Chinese leaders. A little salty, a little sweet, a little heavy, and a little light, I don’t like this dish, but it’s hard not to like it.

What constitutes a kingdom? This school of Chinese cuisine requires specific techniques, from cutting to cooking. The chefs try not to change the original taste of the ingredients, and sometimes cut the vegetables and other pieces into a nice confetti before serving! You will also find freshwater fish and other marine fish that live in the river.
