Nadru Monje – Fritters of Lotus Stem In Kashmiri Style

Muskaan Shah, my best friend and sister, invited me to his house to help his mother cook. Why? His brother Masroor Bhaiji arrives from Srinagar with his family. He wants me to meet him and spend time with his family. I was busy in the kitchen, standing next to Mummyji (Muskaan’s mother) and completing various tasks like cutting salad leaves, grinding various spices, cleaning coriander leaves, etc.

At 4 o’clock, the bell rang and I could see the little children running from the front door to the bedroom and they were excited to meet Muskaan. He introduced me to the whole family. After some time, he called me again and gave me a bag. He said that the contents of the bag are called NADRU MONJE – when he drinks them he likes them very much. He was prepared by his brother-in-law. I started playing with them and was immediately impressed with the taste. They were long ropes and very elegant in terms of design.

The next minute I asked them to give me the recipe. He asked me to enjoy the dish and forget about the recipe. However, over the years, I learned his way. There are three different types of recipe. I will be sharing all three in this article.

Nadru Monje In Rice Flour

Essential Ingredients

  • Lotus seeds – 1 kg
  • Rice flour – 3 cups
  • Kashmiri Red Chilli Powder-2 spoons
  • Asafoetida – 1/2 tsp
  • Salt – 1 tablespoon
  • oil – 1 kg
  • Water – 1 cup

Preparation Methods

  • Wash and rinse the lotus root thoroughly under running water.
  • Remove the outer covering of the lotus plants.
  • Cut long strips from the lotus stem
  • Place in a container filled with water.
  • Take another vessel.
  • Add rice flour in it.
  • Add red kashmiri powder to the rice flour.
  • Pour salt in it.
  • Add asafoetida in it.
  • Mix well with fingers.
  • Add water to the flour.
  • Mix everything together in a smooth batter.
  • Be careful not to add too much water to the batter. The plant must be consistent.
  • Take a large frying pan and place it on the gas stove.
  • Add oil and turn on the gas stove.
  • Remove the lotus stem from the water.
  • Remove excess water from the lotus stems
  • Add to batter.
  • Fold the lines well into the batter.
  • Check if the oil has reached its maximum temperature.
  • Place each lotus stem in the oil.
  • Turn the other side when it is fried well.
  • Keep tossing the lines continuously to prevent the oil from burning.
  • When the strips are well fried in oil, remove them and place them on a tissue paper. This helps to remove the excess oil found in the fritters.
  • Serve immediately with mint or tomato sauce.

This is a true and authentic recipe for nadru monje. I was surprised to know that this dish is well prepared and distributed to all the devotees and visitors who come to visit the Hazrat Bal Mosque in Srinagar, Kashmir. Later, I realized that Sufi saints used to eat snacks in this valley. Even now, soft drinks are in high demand at this place. He is one of the founders of the Islamic Kashmiri tradition. The above mentioned recipe is enjoyed by all kashmiri people.

Nadru Monje In Gram Flour

Essential Ingredients

  • Lotus seeds – 1 kg
  • Gram flour – 3 cups
  • Kashmiri Red Chilli Powder-1 spoon
  • Salt – 1 tablespoon
  • Water – 1 cup
  • Turmeric Powder – 1 tablespoon
  • oil – 1 kg
  • Cumin seeds – 1 tablespoon

Preparation Methods

  • Wash the lotus root under running water.
  • Cut straight and take the strings from the lotus stem.
  • Place in a container filled with water.
  • Take a vessel and add gram flour, salt, red kashmiri pepper, turmeric powder and cumin seeds.
  • Add enough water to make a smooth batter.
  • Drain the excess water from the lotus stems and add to the batter.
  • Take a wok and add oil in it.
  • Put it on the gas stove.
  • When the oil is very hot, put the lotus stems in it.
  • Fry them well in oil.
  • Remove them from the oil and place them on a tissue paper.
  • Serve them with tomato sauce.

However there are some who would like to add an egg or two to the rice flour to make fritters. This gives a different flavor to the fritters. It doesn’t matter what style one wants to adopt in the preparation, these refreshing drinks are ready to be enjoyed by everyone in the family.

I love the first version of this recipe. I discovered that this healthy food helps people suffering from high blood pressure. It helps to get rid of mood swings. It is good for someone who is suffering from depression. I just love snacks and prepare them whenever I want and share them with all my kids at home.
