Rhubarb – Continuing Care and Harvesting
Note: Rhubarb leaves are poisonous, so do not eat them. The stalks are amazing, so eat as much as you can. One cup of chopped rhubarb stalks contains 13 percent of your daily value of vitamin C and 68 percent of your DV of vitamin K. It also contains calcium, manganese and potassium.
Rhubarb can be low-maintenance, but it does need food and water. Make sure your rhubarb doesn’t dry out in the heat. As the years go by, your soil may lose its ability to retain water, so you should dig up the rhubarb in the spring, change the soil, divide, and replant.
Food and Water, Please
Each spring work one cup of 10-10-10 fertilizer into the soil around each plant, to a depth of six inches. Use a small spade or your fingers to avoid disturbing the roots.
As with most perennials, a good watering at the first frost will do wonders to protect the roots during the winter.
After the first or second frost, but before the snow, clean the remaining leaves away from the plant. Top coat with well-rotted compost at a good 3-inch depth. Increase the top dressing in a circle about the diameter of the big summer crown. Add 6 inches of grass mulch and leave it for the winter.
Mulch is your friend! It has been said that established rhubarb will no longer feel competition. Mulching depends on how well your soil holds water and how many weeds grow around the rhubarb.
Harvesting
The rhubarb harvest lasts from spring and early summer until June or July. The leaves have lots of color, flavor, and taste in early spring.
Rhubarb should not be harvested until the third year after planting. However, a small number of leaves can be pulled in the second year.
Plants produce flower stalks each season and these should be cut as soon as they appear.
Cut the leaves off the harvest stalks because they are poisonous. Toss the leaves into the compost pile and they will lose their toxicity and become the best compost for your local garden.
We recommend the Valentine colors because we’ve found them to be both practical and delicious. There are several varieties, so plant one of each and see for yourself which one you like best. Now there’s an interesting test!
