Kinds of Ham in The Philippines

Filipino meat or “jamon” is one of the culinary products that Spain left behind after their 377-year rule. There are other traditional Spanish dishes that they left behind as their heritage but for many, ham is the most popular of them all.

Filipino meat comes in many forms and flavors but the most popular form is the ball-shaped “hamon de bola” which is usually sweet. Although hamon de bola is popular, Chinese meat is very popular and is present on the table at Christmas time along with hamon de bola. Chinese meat differs from the taste of hamon de bola because it is salty and sweet. Most people like the combination of salt and sweet.

The Majestic brand of hams is a sweet and salty alternative to this brand of ham. The secret to its unique taste is the healing process. The hams are cured in oak barrels and then aged to develop their flavor. It is spiced with spices before cooking to achieve the best taste. Their brand has been established for over seventy years and is one of the most popular brands of ham in the Philippines.

When serving Chinese meat, it should be heated or cooked and then dipped in the sauce that comes with it. There are Chinese hams and jamon de bola available commercially but the best ones are made by restaurants and specialty shops. Commercial hams are often made with preservatives that are harmful to our health. Expensive hams taste better than cheaper processed varieties. During the Christmas season, Chinese people give ham or Jamon de Bola to relatives, friends, and business associates.

After going to midnight mass or “simbang gabi” people go home and eat “Noche Buena” or midnight meal. It is also the time when the family gives each other gifts. The Christmas buffet or “Noche Buena” is not complete without the trio of Chinese ham, jamon de bola, and queso de bola. Queso de bola or edam cheese is eaten with ham and is often placed inside slices of bread to make a sandwich. During Christmas dinner, Filipinos also drink wine.

Some countries have their own type of hams with special curing methods but the most famous and rare is the “Jamon Iberico de Bellota” from Spain. It is a cured acorn meat that is well-known for its nutritious and unique taste that is popular all over the world. It has a long curing process that improves its flavor and texture.
