A Brief History Of Chocolate

Chocolate is one of the most popular and loved foods in the world. They are loved in all kinds of colors and sizes – bars, candies, chocolate spreads, chocolate liquids… you name it. Anything made from chocolate leaves many of us wanting more. But how did this amazing mineral come to be? Who was the genius who decided to create it? Chocolate has had an amazing journey throughout our history, ending today where it remains a favorite among sweet tooth aficionados looking for sweet satisfaction.

Cacao beans grow naturally on trees, so it wasn’t long until ancient people in Mesoamerica, where it originated, discovered the taste and properties of cacao. Chocolate began to be consumed as water, a drink made from cacao beans to which spices and wine were added; giving it a bitter taste rather than the sweet one we all know and love. It was believed that this drink had aphrodisiac properties, a story that still exists today but needs to be proven. In the 16th century, the first chocolate reached Europe, where sugar was added to the mix. The upper classes ate it at first, but it soon spread to the common people, who enjoyed it. The word “chocolate” comes from “chocolatl”, which is Old Chinahuatl, the language of the Aztecs.

Between the 1700s and 1900s, the passion for chocolate grew, when Europeans, especially the French, English, and Dutch, created colonies and began planting cacao trees to harvest the much-needed beans. But, it was during the French Revolution that chocolate began to take on the shape and taste we know now. In 1815, Coenraad van Houten, who was a Dutch chemist, decided to include alkaline salts in the composition of chocolate. This practice really eased his initial pain. In 1828, a chemist developed a special press that could remove almost half of the chocolate from the butter, helping them reach a quality that was consistent.

From now on, it was only one step to making modern chocolate. In 1847, Joseph Fry took the “Dutch cocoa”, as it was called, and added melted cocoa butter, creating a very simple chocolate. And in 1879, Rodolphe Lindt, a chocolatier with the same name, brought the final product of modern chocolate with his machine, which enhanced the taste and texture of chocolate by mixing chocolate with cocoa butter. Despite this, chocolate drinks were still popular, and milk was added from the 17th century, to increase their taste. But it was in 1875 when milk chocolate appeared, Daniel Peter mixing a chocolate drink with powdered milk, created by Henri Nestlé.

Therefore, civilization has been interested in chocolate since ancient times, working hard and using technology to prepare products for this wonderful dessert. Today, there are many types of chocolate available; we can do whatever we like!
