2. Basil – a fragrant green leaf, a member of the mint family. Basil is a great addition to any dish with tomatoes and works well on roasted tomatoes.
3. Celery Seed – ground or whole, has a strong celery flavor. Too much can make the spice “hot”. Celery is good on its own or in combination with other herbs.
4. Marjoram – gray green herb from the mint family, taste similar to oregano but mild. Although we love oregano in dishes like spaghetti and meatballs or lasagnas, it can be too strong for vegetables. Marjoram will provide a similar flavor without being too strong.
5. Parsley – delicate taste. Chopped fresh parsley tops a plate of roasted vegetables. Adding parsley to vegetables while cooking brings out the flavor of this herb. Save a few sprigs of parsley to garnish the dish.
6. Rosemary – very fragrant leaves that resemble pine needles, strong taste. Rosemary has a strong, distinct flavor; you’ll want to use caution first.
7. Chili Powder – chili powder is a combination of cumin, pepper, oregano, and allspice. You may be surprised to see this on the list of vegetarian options. If your family likes spicier foods, consider sprinkling a little chili powder on your vegetables before serving.
Caution: use herbs and spices sparingly to bring out the true flavor of the vegetables. The more you cook with herbs, the more you will discover what spices your family likes and learn to use less.
