Filipino Recipes – Binagol (Dessert) Recipe – Pinoy Food
Binagol, also called binangol, is a delicacy from Leyte, an island in the Visayas. There are several variations of this recipe, some using chocolate flavoring and others with nuts and butter. This recipe is simple, though.
Taro root mixture is in ground coconut shells, hence the name binagol from the word “bagol”, a Visayan word that means coconut shells. Due to the abundance of coconut trees in this tropical country, you are sure to find a variety of delicious dishes using coconut as a snack. Cooking this recipe can be a tedious process but the end result is worth the effort.
Ingredients:
- 1 cup rich coconut milk (from 2 medium coconuts)
- ¾ cup raw gabi or taro root (shredded)
- ¾ cup brown sugar
- ½ can full cream condensed milk
- 4 egg yolks
- banana leaves are disappearing
- 4 medium coconut shells (rinsed)
- tie rope
Cooking Tips:
- Combine shredded taro root, coconut milk and brown sugar. Put it in a thick-bottom pan and cook on medium heat for about 6 minutes while stirring continuously. Reduce the heat slightly and cook for 10 minutes.
- Add the melted milk and cook for 20 minutes on low heat, stirring constantly.
- Fill the shells with the cooking mixture. In the middle, make a well and drop 1 raw egg in each one. Cover the top with the cooked Taro mixture and spread well. Write very close to the edge of the coconut shell.
- Use two layers of dried banana leaves to cover the filled coconut shells and use the strings to tie it tightly.
- Steam for half an hour.
