Candied Yams Sweetened With Orange Juice And Maple Syrup
I try to make everything a little healthier; Candied yams are the same. Most salty yam recipes call for butter and brown sugar or dark corn syrup. I keep the butter but swap out the less healthy sweeteners and include orange juice and maple syrup. I’m adding real vanilla beans to the mix to add flavor. I top the whole thing off with organic vanilla marshmallows from the bakery. The result is lean, healthy and very tasty. I like to bake candied yams in my toaster oven while my main dish is in my full oven. This way everything is hot and ready at the same time.
Ingredients
4 gem or garnet yams (any yams will do, but they have the most beautiful colors)
1/2 cup fresh orange juice (Valencia oranges work well in this recipe)
1/2 cup grade B maple syrup (grade B maple syrup costs less and tastes better than grade A)
1 stick (4 ounces) butter
1 vanilla pod
1 tablespoon of white vanilla
1 tablespoon ground cinnamon
1/4 teaspoon mace (you can substitute nutmeg if you can’t find mace, but reduce it to 1/8 teaspoon)
1/4 teaspoon of sea salt
12 ounces organic vanilla marshmallows
Directions
Preheat your toaster oven to 400 degrees F.
Avoid yams. Cut the yams into 1/2 inch cubes and place them in a shallow baking dish. Mix the butter, orange juice, maple syrup, vanilla extract, cinnamon, mace and sea salt in a saucepan. Carefully split the vanilla bean lengthwise and use the end of a knife to scoop out the seeds. Put both the pan and the seeds in the saucepan. Heat on low heat for 30 minutes, try not to allow it to boil or cool during this time. Remove the vanilla pod and pour the sauce over the cubed yams. Mix gently to coat all the cubes. Cook until the yams are soft; this should take about 45 minutes. Remove from the toaster oven and evenly distribute the vanilla marshmallows on top. Return the marshmallows to the oven and turn the heat to 475 degrees F. Bake until the marshmallows are slightly soft; this should take about 8 minutes. This is one area where a toaster oven comes in very handy. Proximity to heating elements leads to faster and even browning.
You may have trouble finding organic marshmallows and store-bought marshmallows are far from natural. My suggestion is: go to the local bakery and ask if they would be willing to make it for you. Luckily, someone at the bakery had also taken a few candy and confectionery classes while in culinary school. Small local businesses are always ready to provide their customers with whatever they want. The bakery around the corner from me makes mine as long as I give them 48 hours notice.
