Not things that chefs, or kitchen staff are trained to do well. Also, why pay a higher wage to someone to do a job they have no training for? Does it make sense to have a receptionist, who is obviously hired for her social skills and ability to make the customer feel valued, fight her personality to become a detail cleaner? The result will be a disgruntled employee with inadequate cleaning.
Visitors don’t want to know about your operating budget. They don’t care that you are trying to save money and multitask your employees. They want more than good food: they want an unforgettable meal! You can’t give them that without confidence that the cleanliness of your restaurant is top notch.
Commercial cleaners make it their job to clean properly (after all, that’s what they do – not serve food or drink). They see cleaning as a multifaceted task. The installation should not only look clean, but smell fresh and germ-free. No spirit stains, no cooking oil, just like your grandmother used to let the breeze blow her curtains.
And let’s not forget the food critics.
Points are scored immediately if your restaurant is not clean, and it is always clean.
We are taught from a young age that it is okay to ask for help, and then we have to learn it again later in life. It tends to expect more from an employee, even if the salary is low – and the amount of money that works is the same, especially in the restaurant business – which, of course, brings more money in hiring and training new employees. Restaurant managers can give them a mop, but every time that means biting off more than they can chew.
