Restore an Old Cast Iron Jambalaya Pot

Ever wondered how to restore that old jambalaya pot your grandma gave you? How about that old Dutch oven or cast iron skillet you find at the butcher shop or in Grandma’s kitchen. Have you ever wondered why you should restore one of these classic pieces of history? If you’ve ever wondered how to “bring” any metal cookware out of the old rust, you’ve come to the right place.

Let’s address the question first, why should I bring back the old jambalaya pot? The truth is, an old jambalaya pot, or Dutch oven is a treasure that can be passed down from generation to generation. Cast iron cookware such as jambalaya pots and Dutch ovens are made of cast iron, which will not corrode. If cared for properly, they will last a long time, making them great gifts to pass down to your children or grandchildren. A gift like this will help them appreciate their heritage and history.

So what do you do when you find this old gem and it’s in less than perfect condition? Don’t throw it away! As my good friend from Cajun country says, “Let’s bring the black pot.” They mean, let’s get this rusty pot of jambalaya back. There is a delivery method. The process is as follows:

  1. First take care of the inside by using a piece of fine steel wool to remove the rust. When you loosen the rust from the surface, dust the jambalaya pot and repeat the process until the rust is gone.
  2. If you remove all the rust with fine steel wool, the pot can be painted red. There is rust in the pores. To remove this rust you need to place a pot of jambalaya on your stove or on an open fire and fill it with water. When the water starts to heat up, use a strong metal to probe the inside. Warm water helps loosen stubborn rust and steel wool removes it. When the water gets so dirty that you can’t see the bottom of the pot, dump the water and start over. You can repeat this several times. Be careful not to bring the water to a boil, it just needs to be very hot, as hot as possible.
  3. Once you’re satisfied that you’ve removed all the rust from the inside of the jambalaya pot, it’s time to harvest. There are several ways to do this but we’ll just look at the easiest way for large pans. Put the pot of jambalaya on the stove or turn the heat back on and start to bake. When hot, take three or four pounds of bacon and put it in the pot. Cook the bacon as long as possible without burning it. While it’s cooking, take a spatula or a large spoon and move the bacon around to cover all sides of the inside of the pot.
  4. Before the bacon starts to brown, remove the pot from the heat and remove the bacon. Take some CLEAN paper towels (not the manufacturer) and dab the excess oil from the jambalaya pot. Take this opportunity to re-grease all internal surfaces. Return the pot to the stove and reduce the heat to high. What you want to achieve here is, keep a low heat on the pot for about an hour. This causes the pores to open and penetrate the oil.
  5. Steps 3 and 4 should be repeated two times except one. Instead of using bacon, you can use lard or oil but do not use vegetable oil or shortening. When you see your pot of jambalaya begin to glow nicely on the inside, you have cooked it well.
  6. Now you have to touch the outside. Unlike the surface, you don’t have to remove the rust if you don’t want to. Some people think that rust adds quality. However, whether you remove the rust or not, you need to take the oil from the last end and wipe the outside of the jambalaya pot.
