The Novice’s First Dinner Party Menu – There is a Solution

Eventually everyone comes to that special day in their lives. It’s not the day you ask your sweetheart to prom, the day you say “I do”, or the day you bring your baby home for the first time. While those days are truly life-changing and very special, there is one day that struck fear into the heart of a first-time reader. I’m talking about the day you throw your first dinner party. I’m talking about the one that matters most to you!

It starts innocently enough. Your mother or other living relative is asking you to prepare a Holiday meal this year or you want to impress a friend with a home-cooked meal. You’re excited about the event though and can’t wait to get started. Then it hits you when you check your pantry. Your signature dish is Kraft Mac N’ Cheese or Ravioli from the stove and you consider hot water a chore. What are you going to make for dinner?

Well, the first time, preparing dinner is not to be feared, even for a college student. All you need is a kitchen and a little skill. A regular diet consists of four courses:

o Soup

o Salad

Oh Mother

o Food

For foods that are easy to prepare but worth eating, consider:

o Soup

o Salad

o Chicken / Lentils / Baked Baby Potatoes / Acorn Squash / Green Peas

o Ice Cream with Fruit

So, as your special guests will soon do, let’s start with the sauce!

Soup is the best soup because you can buy it in a can or box that is easily hidden from your guests. Hey, chef’s secret! Now don’t ruin the trick by serving it in cups! Everything, even store-bought soup, is well-liked in China, or a bowl of beautiful soup. Pour the dishes in the kitchen and serve them to your guests.

Skip the square saltines and splurge on a special soup package or bread sticks to go with them. My favorite is McCormick’s Gourmet All-Vegetable Bouillon. This MSG-free product provides two cups of broth per cube and honestly tastes just like the one you spend all day cooking vegetables to make a flavorful, rich broth.

Thanks to the design of the salad bag, your second course is already made. Although most salad bags are pre-washed, a second wash is necessary to remove contaminants. This is another course that is well served restaurant style. Use a cookie cutter (diamonds, hearts, circles, etc., not gingerbread people!) to cut out tomato or pepper slices. Use this shape to decorate your salad bowls and serve with your choice of vinaigrette or sweet dressing on the side.

In principle, fried chicken is easy to prepare and beautiful to serve. Look at the notes carefully. If you are buying a “utility grade” bird, parts such as wings or legs may be missing. Your birds should be in good shape. The chicken is easy to flavor and whether you want a light citrus or a strong smoky flavor is up to you.

Check out your options at your local grocery store or the accessories section for an easy first party. Bottled marinades, dry seasonings, seasoning mixes, and even single-use grills are waiting for your help!

No kitchen is complete without a meat thermometer and it is very important when cooking chicken. Serve the fried chicken on a bed of lettuce to add color. Try surrounding the chicken with your cooked carrots, asparagus or any other vegetables for a nice accent and guests’ meals.

Lentil stir-fry is a side dish that can double as a main meal for vegetarians and vegans.

Lentil soup

o Combine two cans of lentils in a bowl.

o Mix in enough crumbs to keep the beans dry.

o Add two eggs (for vegans mix 2 tablespoons of cornstarch in 6 tablespoons of cold water).

o Season to taste with sweet seasonings or pre-mixed ingredients.

o Place the ingredients in a greased pan and cook for one hour.

o Remove the mold from the bowl. If the roast falls or breaks as you unroll it, simply turn it into a smooth round pile on a plate and continue with the decorations.

o Sprinkle some mushroom salt on top.

o Chopped mushrooms and spring parsley on top serve this roast to finish.

o Serve it with extra gravy on the side.

Side dishes that go well with chicken and/or lentils are sweet red potatoes, squash, and green peas. Cut the potatoes in half and toss them in a bowl with olive oil, salt and pepper. This can be cooked in the oven with the chicken or on a baking sheet. Cut the squash in half with a sharp knife and remove the seeds.

Place on a baking sheet, skin side up, and cover with foil. Cook for one hour and serve hot with butter. Use frozen or fresh peas and cook them in hot water. Don’t overcook them or they will be mushy.

If you have tall, clear glasses, you have the perfect plates for serving a quick but elegant dessert. Mix vanilla ice cream with fresh or frozen mixed berries in a glass making sure the ice cream is the last layer. On top of the ice cream is a chocolate covered strawberry and a mint leaf.
