Food History – The Evolution of Our World From Bread to Cheesecake

Have you ever wondered about the origins of certain foods? Who was the first person to eat oysters and why? What medicinal meringue was used as a candy to cure children’s sore throats? What food was served to the first Olympians in 776 BC? What has been found in the pits where people lived 8,000 years ago? Food sources are diverse, intelligent and ever-changing and have not only made history, but are historical.

One of the oldest foods known to bring cave people together to live in communities rather than herd and hunt as nomads. Civilizations found different ways to harvest, prepare wheat and baked dough to make bread, food that was plentiful in the summer and preserved in the winter. The excavations of Pompeii have revealed the secrets of ancient bakeries where the rich and the poor came together for bread. Wheat has been found in the ruins of villages dating back 8,000 years and trampling today’s crops as a link to the past.

One of the most delicious or dangerous foods on our diet is the Latin mussirio, or mushroom. Like bread, mushrooms can also date back to ancient times and are recorded throughout Greek, Roman, Chinese, Japanese and European culinary history. Mushrooms do not have chlorophyll and therefore need to grow from other materials such as dead plants, tree roots or animals. We think of fungi as a bad thing, but where would we be without yeast? We will miss the bread, truffles and beer of our BBQs.

Then there are the poor, mysterious flies. Many people avoid gray, shiny, slippery. Archeological evidence may show oysters coming out of their shells at the same time as soil, but the details of this are as murky as the beds in which they are found. Oyster farming flourished in the 4th century but was disrupted by pagan invasions and did not re-emerge until the 14th century as the privilege of the wealthy. In the 1800s shellfish became more popular as dishes such as stew, fried oysters, scallops Florentine and oyster shish kabob began to appear.

When Harvard graduate students Herbert Dick and Earle Smith went to excavate a New Mexico bat cave, they had no idea they would find 5,600-year-old popcorn. Smith and Dick unearthed well-preserved pieces of corn cobs, including several that had been partially or completely torn off. When they were thrown into the oil, a few seeds still had a flame and they exploded and became white. For hundreds of years, popcorn has been used as food, in jewelry, as breakfast during colonial times and as an attraction inside and outside of grocery stores. In times of depression, when other businesses went bust, popcorn, well, came out. What would a movie theater be without popcorn?

What did the first Olympians eat between chariot races? You guessed it: cheesecake. Well, maybe not, but historians believe it was in the first game. It has been traced back to 2,000 BC through unearthed cheese molds. If the Internet had been invented in 200 BC, cave women around the world would have been sharing Marcus Porcius Cato’s recipe for cheese libum, or cheese cake. From there, cheesecake spread from Greece to Europe and then to America. This soup is enjoyed by every region and every culture and is one of the most popular dishes in the world.

These sweets originated in ancient Egypt as honey sweets that were sprinkled and flavored with the juice of the marsh-mallow plant. These goo-filled growths have appeared along seashores near large bodies of water and in salt marshes. Doctors in the nineteenth century cleverly extracted seeds from the juice, boiled with egg whites and sugar and whipped into a meringue, that when it dried, used as a sore throat for children. When gelatin replaced the juice of the plant, its properties as a suppressant, immune booster and wound healer disappeared. The manufacturing process evolved with the invention of the cornstarch mold process which later gave rise to the modern extrusion process. This involved mixing the sugar mixture through long tubes to be cut into pillows, of the same size.

Years from now when archaeologists are excavating our world, we wonder what they will learn from examples like pork belly, beef pizzle or the much-loved Now and Later variety of toothpicks. One can only wonder ….and keep good records.
